    So, One week ago I get the keys for my new building.

    24 foot ceiling! Love it.

    We are considering opening a brewery in our city.

    Why not?

    Love the idea and have looked into it myself. Lots of B.S. government regulations on sales and taxes kind of took the fun out of it for me. I'll stick to home brewing for now.

    Getting closer.....

    Construction finished.
    Paint finished.
    Waiting for Carpet to be manufactured.
    We are doing it ourselves mostly.
    Replacing windows to modern energy-efficient units.

    This is during construction....we painted walls and no more Brown!

    Right across from each other. We are connecting both building with network wirelessly using satellite looking dish x-mit and receivers.

    Where's the lauter tun and fermentation tanks?

    It doesn't happen that fast!

    We have months of preparation and planning for the Brewery. We need a water-treatment center before it goes into the fermentation tanks. I think the water is key! Must remove Chlorine and Fluoride and other trace elements....then the water is ready to play with.

    We need to decide on Copper or Stainless Steel set-up for our first 7bbl per batch manufacturing. (14 kegs of beer or 7 barrel drums)

    Every Two weeks we will make 14 kegs or 7 barrels worth per to start with.

    There is a brewery down the street from my house that captures moisture from the atmosphere to brew with. Talking with a brewer at another place in Tampa, they spend about 20¢ per gallon on water treatment to first filter with reverse osmosis and then add the minerals to match the water hardness/softness levels of the target beer style.

    Do those 14 kegs go home with employees and if so, are you hiring? Lol

    This is for fun at first.
    Not really for profit.
    All product will be free to employees and family and friends....if we have something left over then maybe we consider selling?
    That would be at least a year away.

    Not necessarily important for getting drunk, but for making palatable beer instead of some jailhouse swill.
    Plenty of mediocre or less breweries out there. (lame) Make better beer or don't bother. My motto.

    The green bus is what I prefer we don't have the same in Europe but I'd seen the same in Africa (probably came from USA) but I love also beer "triple fermentation" often from Belgium …. :)

    I have found this recently and love it. Belgium IPA from "Green Flash".

    We will try many small batches before committing to a batch of 14 kegs!

    I don't want to cry as I have to dump a batch into the sewer. :(
